For a non-arrayed optical telescope, is there a limit to the size a mirror could be?

Hypothetically, a telescope can be quite large, but there are physical infrastructure limitations. The Keck telescopes on Mauna Kea are 10 m in diameter, and they are actually constructed of smaller segments that are placed together and individually adjusted to form a single image. This process could be expanded considerably, but vibration, structural deformation would all conspire to cause blurring.

Boy– good question — I assume your club has experienced members. If they do:
10 inch or 12 inch DOB — go ahead and get the object location computer– so less experience members can quickly find objects.
if you still have money then a refractor such as a Stellarvue 80/9d which you can find used on AstroMart, on a polar mount.
and if you still have money something like an LX200 8" or 10" or a similar Celestron SCT again buy used on all of these scopes-
Added up you should be able to find all of these for about $3000 US dollars used in very good shape.
Start with the DOB as your first purchase– say about $900 or less used…. check out a 10" Orion Intelliscope— or a Zhumell

this is good, but “fifi’s” cover just plain rocks.
If you are in the U.S. and west of the Mississippi, you might be able to see it with a telescope of at least 10" of aperture. NASA TV will be doing a live feed and most certainly have video clips after the event.
As for size of the debris cloud after the impact, its going to be be small, maybe 20 – 30 miles on a side (don't forget, the moon is about 250,000 miles away). The crater it'll impact is something like 50 miles in diameter, but since its near the moon's south pole, its profile is going to be foreshortened.
If they looked like me, they wouldn’t be celebs

The only telescope that has been able to image the disc of a star is the Hubble.
No amateur telescope you can buy has enough resolving power to allow you to see the disc of even the nearest star (..the sun being the exception of course..)
Thank you for the notice – I will correct it at once

A concave mirror focuses the energy collected across the entire aperture of the mirror into a small spot. This is no different than using a magnifying glass.
On Mythbusters, the same effect was demonstrated. What failed was trying to ignite a "ship." which is different than simply starting a fire.
